Roast Broccoli With Olive Oil, Garlic & Lemon….Recipe

Garlic-Roasted Broccoli
            Super easy broccoli recipe with NO BUTTER.  And WOW is it ever delicious!  This is a “Love At First Bite” recipe!

 Total time: 30 Minutes

Prep: 10 Minutes
Roasting Time:  20 to 25 Minutes

Use a roasting temperature of approx. 400 degrees, cook to desired tenderness, which will be 20 to 25 minutes. 


  If you have 4 pounds of broccoli on the pan expect more, if smaller less on time.  Measure the Olive Oil you use so you can calculate the calories later!

4 Pounds of Broccoli Florets with short stem (about 5 cups)
Olive Oil-brush it on,  5 Tablespoons for recipe
Salt & Black Pepper
6 fresh garlic cloves, sliced thin
               (or more if you are a freaky like me)
Zest of a ½ lemon
Fresh Lemon Juice-  3 tablespoons
3 or 4 Tablespoons Pine Nuts- toasted (optional)
1/3 cup Fresh Grated Parmesan Cheese (optional)
2 Tablespoons of thinly sliced fresh basil leaves (optional)

Cut the broccoli into florets, peel the stalk and cut into short pieces if using.   Cover a rimmed sheet pan with parchment paper.  Place broccoli in a single layer.  Drizzle olive oil, spread with a brush.   Salt & Pepper the broccoli and toss.  Cover the garlic cloves with olive oil and sprinkle all over broccoli.  You may want to add a lot more garlic- roasted it is delicious. 

Roast until tender.  Toss once in the process.  Once it is cooked, pour broccoli and olive oil into serving dish.  Toss with the lemon zest, lemon juice.  If you are using pine nuts and parmesan, add those to top.

To toast pine nuts, put in a dry pan and on the stove top- watch them, it only takes a few minutes to put some color on them.  Toast lightly- pine nuts taste MUCH different toasted than raw. Quite good.  Expensive little cooking habit, but oh so delightful!

Serve at once.  My gosh this is delicious.  I have seen it as an appetizer in restaurants.  No butter was used, you could eliminate cheese & nuts.  You can reduce olive oil. It is 120 calories a Tablespoon.  You need enough to brush it on for cooking.
